Carlos Cerquera is the owner of a three-hectare farm called La Esperanza, located near the small town of Pitalito in southwestern Colombia.

Carlos is a young producer and new to specialty coffee, but he is passionate and eager to find out how to cultivate and process his plants in the best possible way. This is evident in the care with which he tends his plantation: every 45 days, he walks through the plantation, clearing it of plants that interfere with the growth of the coffee bushes. He also uses organic fertilizers to provide the plants with optimal nutrients. 

During the harvest season, he measures the sugar content of the cherries and harvests when they reach 22° Brix. After harvesting, the cherries are sorted and then fermented for 40 hours, pulped, and then fermented again for another 40 hours in a tank to remove the mucilage. The coffee is then parabolically dried in a greenhouse for 14 days, being moved and turned every 2 hours so that it releases moisture evenly.

The result is this wonderful coffee.
