The Monteblanco farm, run by the Sánchez family in Huila, offers ideal conditions for growing exceptional coffees. They cultivate the Purple Caturra variety for this coffee on 14 hectares.

The processing is complex and meticulously monitored: after harvesting, the coffee cherries are sorted and prepared for processing. Rodrigo first creates a mother culture of microorganisms in his Purple Caturra cherries. He feeds this with panela and peach pulp to produce 80 liters of active culture. The first fermentation takes a full 190 hours to achieve the correct Brix and pH values.
