This is Choco Chunk. It has this name because a lovely velvety chocolate note accompanies the coffee's colourful bouquet. Here comes a ripe apple, there a cream candy. Everything is embedded in creamy sweetness. Only at the beginning does a citrus note tickle your tongue when you drink it as an espresso. But don't worry, the full body makes the coffee rich and well-rounded and not at all sour in the bad sense.
Prepared as a filter, you will be surprised at how complex and deep a single origin from Brazil can be. Is it because of the processing? Probably.

Fazenda Riacho das Varas is located in Diamantina, Minas Gerais, Brazil. Under the management of Ricardo Hirofumi Yoshimatsu, the farm continues the work that his parents began as coffee producers in 1975.
The Matas de Minas region was not considered suitable for coffee production at the time, but through hard work and dedication the family proved that it was more than possible. Today, Ricardo runs his farm with the idea of constant improvement and sustainable production methods in mind. The farm is located between 1100 and 1200 meters above sea level. 120 of the 122 hectares of land are planted with Mundo Novo, Catuai and Catucai coffee, which corresponds to an annual harvest of 5400 bags.
This lot of Yellow Bourbon was fermented anaerobically.
