María Belén Díaz has been producing specialty coffee for 12 years, and as the daughter of a coffee farmer, she has always had a family connection to coffee. She also worked for several years as a coffee quality analyst in the Cauca Department of Colombia, where she honed her cupping skills and gained knowledge that led her to focus on coffee production. María Belén Díaz is one of the 96 women participating in the Huila-Condor Project, and she was among the first women in the region to receive certification in coffee processing from the Forest Academy in 2024.

María grows coffee together with her husband, Narciso Narváez, and their three sons—a true family project! They came to the town of Acevedo as laborers and, through hard work and saving, purchased the Resinas farm, where they grow varieties such as Papayo, Caturra, Castillo, Borbón Rosado, and Gesha. They dream of their coffee gaining international recognition. They’ve already achieved that with us!

This micro-lot was grown here at an elevation of 1,800 meters. The production of this Pink Bourbon coffee begins with the careful selection of ripe cherries, ensuring exceptional quality. The cherries undergo a 24-hour pre-fermentation, followed by a 36-hour anaerobic fermentation in bags, still encased in their mucilage layer, which enhances their unique flavor profile. The coffee is dried on drying beds for 15 days, ensuring an optimal moisture content. This semi-washed process results in a vibrant and complex flavor profile.
