The journey of Plum Biscuit coffee begins in Colombia at an altitude of 1,400 meters, with the careful selection of ripe red and yellow Caturra coffee cherries. This exceptional quality comes from the renowned El Vergel farm in Fresno, Tolima, which is run by coffee farmers Elías and Shady Bayter.

The beans undergo 48 to 60 hours of anaerobic fermentation, which enhances their unique flavor profile. They are first dried in the sun on raised beds in a “marquesina” until they reach a moisture content of 30%. They are then mechanically dried in rotary dryers at temperatures below 45°C until they reach a moisture content of 18-16%. After a pre-stabilization phase to intensify the aromas, the drying process is completed mechanically until the optimum moisture content is reached.

The beans are then stabilized in GrainPro bags for 45 days to ensure consistency and quality. This careful, natural anaerobic process results in a rich and complex flavor profile with notes of chocolate, plum, guava, red fruits, citric acid, and mandarin.
