We source this green coffee through “Semilla,” whose goal is to create real added value through long-standing partnerships with farms and producers. They support the producers not only by purchasing their coffee at fair prices, but also by working with them to improve the cultivation and quality of the coffee year after year.
This bean comes from producer José Rodriguez in the Santa Rosa region of Guatemala, which is located in the southern part of the country. José got his start in the coffee industry thanks to his father, who taught him how to grow and process coffee. When he started working in this field, his father was already growing coffee, so it was only natural that he would make coffee his life’s work. It’s also important to note that since 2018, he has been part of the peaceful resistance movement in his community of Casillas against the mining project in San Rafael.
This coffee is harvested at the perfect stage of ripeness, undergoes a 24-hour anaerobic fermentation, and is then pulped without the use of water. The beans are then fermented again in sealed bags for 46 hours. Afterward, they are dried on covered raised beds for 12 days. The dried beans are stored in sealed bags in the shade until they are shipped. This coffee was harvested and processed from January through July and shipped in August.
Regarding his use of cherries, José himself says: “The process we use to remove the pulp from the coffee cherries and transform them into parchment is very rewarding because it yields a higher quality product, and we retain all the byproducts of the process, which we can use as fertilizer for our coffee plants. This environmentally friendly method ensures we don't pollute, and that's why we want to continue ( ... ) to receive a fair price."
